A Refreshing Summer Salad


Makes 8 servings


2 seedless watermelons, cut into sixteen 1” thick triangles

Block Feta cheese, cut into eight ½” thick sliced squares

Arugula for topping

Balsamic vinegar for drizzle

Olive oil for drizzle

Pinch of sea salt



Layer watermelon slices with feta and top with an additional slice of watermelon. Sprinkle arugula over the “watermelon sandwiches” and drizzle with balsamic vinegar and olive oil. Top with a pinch of sea salt. Enjoy with a glass of Elouan Rosé!
